Ingredients
- 1 cup dried lentils, rinsed
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 2 medium potatoes, cubed
- 1 zucchini, diced
- 1 cup diced tomatoes (fresh or canned)
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1 bay leaf
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish

Preparation Steps
- Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant.
- Stir in carrots, celery, and potatoes. Cook for 5 minutes, allowing the vegetables to soften slightly.
- Add cumin, smoked paprika, turmeric, and bay leaf, stirring to coat the vegetables with the spices.
- Add lentils, diced tomatoes, and vegetable broth. Stir well and bring to a boil.
- Lower the heat, cover, and let the stew simmer for 30-35 minutes, or until the lentils and vegetables are tender.
- Stir in zucchini during the last 10 minutes of cooking. Adjust salt and pepper to taste.
- Remove the bay leaf and serve hot, garnished with fresh parsley.
