Coconut Cream Cake

Introduction

Ingredients
For the Cake:
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup vegetable oil
1 3/4 cups granulated sugar
4 large eggs
1 tsp vanilla extract
1 tsp coconut extract
1 cup coconut milk

For the Coconut Cream Frosting:
2 cups heavy whipping cream
1/2 cup powdered sugar
1/2 tsp coconut extract
1 cup shredded coconut (for garnish)

Preparation Steps
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, beat butter, oil, and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla and coconut extracts.
Gradually add the dry ingredients to the wet mixture, alternating with coconut milk. Start and end with the dry ingredients. Mix until just combined.
Divide the batter evenly between the prepared pans. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.
Beat heavy cream, powdered sugar, and coconut extract until stiff peaks form.
Place one cake layer on a serving plate, spread a generous layer of frosting, and top with the second cake layer. Frost the top and sides of the cake.
Sprinkle shredded coconut evenly over the cake. Chill for 1 hour before serving to allow the flavors to meld.
