Pineapple Upside-Down Cake

Introduction
This Pineapple Upside-Down Cake is a timeless classic, featuring caramelized pineapple slices and cherries on a buttery, moist cake. Perfect for celebrations or weekend baking, it’s a deliciously nostalgic dessert that’s surprisingly easy to make.

Ingredients
For the Topping:

  • 1/4 cup butter (melted)
  • 1/2 cup brown sugar
  • 6-8 pineapple rings (canned or fresh)
  • Maraschino cherries (optional, for decoration)

For the Cake Batter:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 2/3 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Preparation Steps

  1. Prepare the Topping: Preheat your oven to 350°F (175°C). Pour the melted butter into a round 9-inch cake pan. Sprinkle brown sugar evenly over the butter. Arrange the pineapple rings over the sugar and place a cherry in the center of each ring. Set aside.
  2. Mix the Cake Batter: In a mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, sift together flour, baking powder, and salt. Gradually add the dry mixture to the creamed butter, alternating with milk. Mix until smooth.
  4. Assemble: Pour the batter over the pineapple topping, spreading it evenly with a spatula.
  5. Bake: Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool and Invert: Allow the cake to cool for 10 minutes in the pan. Run a knife around the edges to loosen, then invert the cake onto a serving plate. Let it rest for a moment before lifting the pan off.
