Potato and Leek Soup

Introduction

This creamy and comforting Potato and Leek Soup is the perfect bowl of warmth on chilly days. With simple ingredients and a silky texture, it’s a classic dish everyone loves.

Ingredients

  • 4 large potatoes, peeled and diced
  • 3 leeks, trimmed and thinly sliced (white and light green parts only)
  • 4 cups vegetable or chicken stock
  • 1 cup heavy cream (or milk for a lighter option)
  • 2 tbsp butter
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • Optional garnish: chopped chives, croutons, or shredded cheese

Preparation Steps

  1. Prepare the vegetables: Clean and slice the leeks. Peel and dice the potatoes into small cubes for quicker cooking.
  2. Sauté the leeks: In a large pot, melt butter over medium heat. Add the sliced leeks and garlic, and sauté for 5–7 minutes until soft and fragrant.
  3. Add potatoes and stock: Add the diced potatoes to the pot and pour in the vegetable or chicken stock. Bring to a boil, then reduce the heat and let it simmer for 20 minutes or until the potatoes are tender.
  4. Blend the soup: Use an immersion blender to purée the soup until smooth. If you prefer a chunkier texture, blend only a portion of the soup.
  5. Stir in cream: Add the heavy cream and stir well. Heat gently, but do not boil. Season with salt and pepper to taste.
  6. Serve and garnish: Ladle the soup into bowls and garnish with chopped chives, croutons, or a sprinkle of shredded cheese if desired.
