Lentil and Spinach Soup

Ingredients

  • 1 cup dried lentils (green or brown), rinsed
  • 4 cups vegetable broth
  • 2 cups fresh spinach, washed and roughly chopped
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin powder
  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp turmeric powder
  • Salt and pepper to taste
  • 1 tbsp lemon juice (for garnish, optional)

Preparation Steps

  1. Rinse the lentils thoroughly and chop the vegetables.
  2. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, cooking until softened (about 5 minutes). Stir in the garlic, cumin, paprika, and turmeric. Cook for another minute until fragrant.
  3. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 20–25 minutes or until the lentils are tender.
  4. Stir in the chopped spinach and cook for an additional 5 minutes, allowing the spinach to wilt.
  5. Add salt, pepper, and lemon juice to taste. Adjust seasoning as needed.
  6. Ladle the soup into bowls and enjoy warm with crusty bread or a light salad on the side.
