  • 4 large russet potatoes, baked
  • 4 slices of bacon, cooked and crumbled
  • 2 cups chicken broth
  • 2 cups whole milk
  • 1/2 cup heavy cream

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Preparation Steps

  1. Bake the potatoes: Preheat your oven to 400°F (200°C). Wash and dry the potatoes, then bake them for about 1 hour or until tender. Allow to cool, then peel and roughly chop.
  2. Cook the bacon: While the potatoes are baking, cook the bacon in a skillet until crispy. Drain on paper towels, crumble, and set aside.
  3. Prepare the roux: In a large pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a smooth paste.
  4. Add liquids: Gradually whisk in the chicken broth, milk, and heavy cream. Cook until the mixture begins to thicken.
  5. Incorporate potatoes: Add the chopped potatoes to the pot and mash them slightly with a potato masher for a chunky texture.
  6. Season and simmer: Stir in cheddar cheese, sour cream, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
  7. Serve: Ladle the soup into bowls and top with crumbled bacon, green onions, and extra cheese. Serve hot.
