8 oz rice noodles or pasta
½ cup peanut butter
⅓ cup tamari or soy sauce
2 tbsp honey
¼ cup Thai red curry paste
1 tbsp ginger, grated
2 carrots, shredded


2 bell peppers, sliced
¼ cup + 1 tbsp sesame oil
8 oz halloumi, cubed
6 garlic cloves, chopped
½ cup basil & cilantro, chopped
2 green onions, sliced
3 tbsp sesame seeds
3 tbsp peanuts, chopped
2 tbsp lime juice

Directions:

  1. Cook noodles, drain, and mix with carrots and peppers.
  2. Combine peanut butter, soy sauce, honey, curry paste, ginger, and water, then pour over noodles.
  3. Pan-fry halloumi until golden; cook garlic in sesame oil.
  4. Toss noodles with halloumi, garlic oil, herbs, lime juice, and garnish with sesame seeds and peanuts.
