Black Pepper Chicken with Mushrooms

Ingredients:

  • Chicken:
    • 1 lb (450g) boneless chicken thighs or breasts, cut into bite-sized pieces
    • 2 tbsp soy sauce
    • 1 tbsp cornstarch
    • 1 tsp sesame oil (optional)

  • Vegetables:
    • 1 cup mushrooms (button, cremini, or shiitake), sliced
    • 1 onion, sliced
    • 1 bell pepper (any color), sliced (optional)

  • Sauce:
    • 2 tbsp oyster sauce
    • 1 tbsp soy sauce
    • 1 tbsp dark soy sauce (for color, optional)
    • 1 tbsp rice vinegar or Shaoxing wine
    • 1 tbsp black pepper (freshly ground or coarsely cracked)
    • 1 tsp sugar
    • 2–3 cloves garlic, minced
    • 1/2 inch ginger, minced
    • 1/4 cup water or chicken stock

  • Other:
    • 2 tbsp oil (vegetable or sesame)
    • Green onions for garnish (optional)


Instructions:

  1. Marinate Chicken:
    • Combine chicken, soy sauce, cornstarch, and sesame oil. Mix well and let sit for 15–30 minutes.

  1. Make Sauce:
    • In a bowl, mix oyster sauce, soy sauces, vinegar/wine, black pepper, sugar, and water/stock. Set aside.

  1. Stir-fry:
    • Heat 1 tbsp oil in a pan or wok over medium-high heat.
    • Sear the marinated chicken until browned and cooked through (5–7 minutes). Remove and set aside.

  1. Sauté Veggies:
    • In the same pan, add remaining oil. Sauté onions, garlic, ginger, and mushrooms (and bell peppers if using) until softened and aromatic (3–4 minutes).

    • Return chicken to the pan. Pour in the sauce. Stir well and cook for another 2–3 minutes until everything is well coated and sauce thickens slightly.
