Black Pepper Chicken with Mushrooms
Ingredients:
- Chicken:
- 1 lb (450g) boneless chicken thighs or breasts, cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp sesame oil (optional)
- Vegetables:
- 1 cup mushrooms (button, cremini, or shiitake), sliced
- 1 onion, sliced
- 1 bell pepper (any color), sliced (optional)
- Sauce:
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp dark soy sauce (for color, optional)
- 1 tbsp rice vinegar or Shaoxing wine
- 1 tbsp black pepper (freshly ground or coarsely cracked)
- 1 tsp sugar
- 2–3 cloves garlic, minced
- 1/2 inch ginger, minced
- 1/4 cup water or chicken stock
- Other:
- 2 tbsp oil (vegetable or sesame)
- Green onions for garnish (optional)
Instructions:
- Marinate Chicken:
- Combine chicken, soy sauce, cornstarch, and sesame oil. Mix well and let sit for 15–30 minutes.
- Make Sauce:
- In a bowl, mix oyster sauce, soy sauces, vinegar/wine, black pepper, sugar, and water/stock. Set aside.
- Stir-fry:
- Heat 1 tbsp oil in a pan or wok over medium-high heat.
- Sear the marinated chicken until browned and cooked through (5–7 minutes). Remove and set aside.
- Sauté Veggies:
- In the same pan, add remaining oil. Sauté onions, garlic, ginger, and mushrooms (and bell peppers if using) until softened and aromatic (3–4 minutes).
- Combine:
- Return chicken to the pan. Pour in the sauce. Stir well and cook for another 2–3 minutes until everything is well coated and sauce thickens slightly.
- Garnish and Serve:
- Garnish with green onions if desired. Serve hot with steamed rice or noodles.
