Chicken Scampi with Garlic Parmesan Rice

Chicken Scampi

Ingredients:

  • 1 lb boneless, skinless chicken breast, cut into thin strips
  • Salt and pepper to taste
  • 1/2 tsp paprika (optional)
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (or chicken broth)
  • 2 tbsp lemon juice
  • 2 tbsp butter
  • 2 tbsp chopped fresh parsley
  • Grated Parmesan for garnish

Instructions:

  1. Season chicken with salt, pepper, and paprika.
  2. In a skillet, heat olive oil over medium-high heat. Add chicken and cook until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds.
  4. Add wine (or broth) and lemon juice. Let simmer for 2–3 minutes.
  5. Stir in butter and return chicken to pan. Coat well.
  6. Sprinkle with parsley and Parmesan before serving.


Garlic Parmesan Rice

Ingredients:

  • 1 cup long grain rice
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: 1 tbsp chopped parsley

Instructions:

  1. In a saucepan, melt butter over medium heat. Add garlic and sauté until fragrant.
  2. Stir in rice and cook for 1–2 minutes to toast slightly.
  3. Add chicken broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15–18 minutes, until rice is tender.
  5. Remove from heat, fluff with a fork, and stir in Parmesan, salt, pepper, and parsley.
