Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup frozen mixed vegetables (optional)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- ½ tsp dried parsley
- 1 can (16 oz) refrigerated biscuit dough (or homemade dumplings)
Instructions
- Prepare the Base
- Place the chicken, onion, garlic, chicken broth, cream of chicken soup, salt, pepper, thyme, and parsley into the crockpot.
- Stir to combine.
- Cook the Chicken
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
- Shred the Chicken
- Remove the chicken, shred it with two forks, and return it to the crockpot.
