INGREDIENTS:

1 tablespoon vegetable oil
1 small onion, diced
2 garlic cloves, minced
1 inch piece of ginger, grated


4 cups vegetable broth
2 cups water
1 tablespoon soy sauce
1 tablespoon sesame oil
1 cup mushrooms, sliced (shiitake or button)
2 cups bok choy, chopped
Salt and pepper to taste
Green onions, sliced (for garnish)

For the Potstickers:
1 package of frozen potstickers (about 12-16 pieces)

STEP 1: PREPARE THE SOUP BASE

  • Heat Oil: In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
