  • 2 cups (480ml) fish stock or vegetable broth
  • 1 lime, zest and juice
  • 1 teaspoon fish sauce (optional, for depth of flavor)
  • Salt and pepper to taste
  • 1/2 cup (80g) fresh cilantro, chopped (for garnish)
  • 1 tablespoon fresh mint (optional, for garnish)

Optional Vegetables:

  • 1 medium carrot, julienned
  • 1 small zucchini, sliced into half-moons
