  • 1 cup (200g) granulated sugar
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk
  • 1/2 cup (120ml) hot water or brewed coffee

For the Pecan Layer:

  • 1 1/2 cups (150g) chopped pecans
  • 1/4 cup (50g) brown sugar
  • 1/4 teaspoon cinnamon

For the Frosting:

  • 1 cup (225g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1/4 cup (60ml) heavy cream (more if needed for consistency)
  • 1 teaspoon vanilla extract

For Garnish (Optional):

  • Whole or chopped pecans
  • Chocolate shavings

Instructions:

1. Prepare the Cake Batter:

  • Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

4. Make the Frosting:

5. Assemble the Cake:

  • Place one cake layer on a serving plate, pecan side up. Spread a layer of frosting on top.
  • Place the second layer on top, pecan side up. Frost the sides of the cake, leaving the pecans on top exposed for texture and visual appeal.

6. Garnish and Serve:
