Ingredients

  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Preparation Steps

  1. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and Kalamata olives.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss well to coat all the ingredients.
  4. Sprinkle crumbled feta cheese on top if using.
  5. Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.
