Ingredients

  • 2 cups coconut milk
  • 2 cups chicken or vegetable stock
  • 1 cup cooked chicken (shredded) or cubed tofu

  • 2-3 tbsp Thai red curry paste
  • 2 stalks lemongrass, bruised
  • 1-inch piece of ginger, sliced
  • 2-3 kaffir lime leaves (optional)
  • 2 tbsp fish sauce (or soy sauce for vegetarian)
  • 1 tbsp lime juice
  • 1 tsp sugar
  • 1-2 red chilies, sliced (adjust for spice level)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Preparation Steps

  1. Prepare the base: In a large pot, heat the coconut milk and stock over medium heat. Add the lemongrass, ginger, and kaffir lime leaves. Let it simmer for 5-7 minutes to infuse the flavors.
