Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 4 cups kale, chopped and stems removed
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded carrots
- 1/4 cup red onion, thinly sliced
- 1/4 cup sunflower seeds or chopped almonds
- 1/3 cup feta cheese (optional)
Dressing
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 1 clove garlic, minced
- Salt and pepper to taste

Preparation Steps
- Cook the quinoa: Combine the rinsed quinoa and water in a medium saucepan. Bring to a boil, reduce heat, and simmer for 15 minutes or until the water is absorbed. Remove from heat, fluff with a fork, and let it cool.
- Prepare the kale: Place the chopped kale in a large mixing bowl. Drizzle a small amount of olive oil over it and massage the leaves for 2-3 minutes until softened.
- Mix the dressing: In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper until emulsified.
- Assemble the salad: Add the cooled quinoa, cherry tomatoes, shredded carrots, red onion, and sunflower seeds to the bowl with kale. Pour the dressing over the salad and toss to combine.
- Garnish: Sprinkle with feta cheese (if using) and additional sunflower seeds for a delightful crunch.
- Serve and enjoy: Serve immediately or refrigerate for up to 2 days for a chilled salad.
