Combining the earthy taste of quinoa with the hearty texture of kale, crunchy veggies, and a zesty lemon dressing, this salad is perfect for a light lunch or a side dish. It’s easy to make, customizable, and ideal for anyone looking to nourish their body with wholesome ingredients.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 4 cups kale, chopped and stems removed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded carrots
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup sunflower seeds or chopped almonds
  • 1/3 cup feta cheese (optional)

Dressing

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 clove garlic, minced
  • Salt and pepper to taste

Preparation Steps

  1. Cook the quinoa: Combine the rinsed quinoa and water in a medium saucepan. Bring to a boil, reduce heat, and simmer for 15 minutes or until the water is absorbed. Remove from heat, fluff with a fork, and let it cool.
  2. Prepare the kale: Place the chopped kale in a large mixing bowl. Drizzle a small amount of olive oil over it and massage the leaves for 2-3 minutes until softened.
  3. Mix the dressing: In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper until emulsified.
  4. Assemble the salad: Add the cooled quinoa, cherry tomatoes, shredded carrots, red onion, and sunflower seeds to the bowl with kale. Pour the dressing over the salad and toss to combine.
  5. Garnish: Sprinkle with feta cheese (if using) and additional sunflower seeds for a delightful crunch.
  6. Serve and enjoy: Serve immediately or refrigerate for up to 2 days for a chilled salad.
