Coffee Walnut Cake

Ingredients
For the Cake:
2 ½ cups (320g) all-purpose flour
1 cup (200g) granulated sugar
1 cup (225g) unsalted butter, softened
4 large eggs
2 tsp baking powder
2 tbsp instant coffee dissolved in 2 tbsp hot water
1/2 cup (120ml) milk
3/4 cup (100g) chopped walnuts

For the Frosting:
1 ½ cups (170g) powdered sugar
1/2 cup (115g) unsalted butter, softened
2 tsp instant coffee dissolved in 1 tsp hot water

For Garnish:
Walnut halves for decoration

Preparation Steps
Preheat the oven to 350°F (175°C) and grease and line two 8-inch round cake pans with parchment paper. In a bowl, whisk together the flour and baking powder, then set aside. In a large mixing bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the dissolved coffee and milk until fully combined. Gradually add the dry ingredients to the wet mixture, folding gently until just combined—avoid overmixing. Fold in the chopped walnuts gently. Divide the batter evenly between the prepared pans and bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack. To make the frosting, beat the softened butter and powdered sugar until smooth, then mix in the dissolved coffee. Once the cakes are completely cooled, spread a layer of frosting on one cake layer, place the second layer on top, and cover with frosting. Decorate with walnut halves, slice, and serve with your favorite coffee or tea.
