Ingredients
For the Chocolate Sponge Cake:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup buttermilk
- 1 tsp vanilla extract
For the Cherry Filling:
- 1 1/2 cups pitted sweet cherries (fresh or canned)
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1/4 cup water
For the Whipped Cream Frosting:
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
For Garnishing:
- Chocolate shavings
- Fresh cherries (optional)

Preparation Steps
- Prepare the Sponge Cake:
- Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk sugar, eggs, oil, buttermilk, and vanilla until smooth. Gradually add the dry ingredients and mix until just combined.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
- Make the Cherry Filling:
- In a saucepan, combine cherries, sugar, and water. Bring to a simmer over medium heat.
- Dissolve cornstarch in 1 tbsp water and stir it into the cherry mixture. Cook until thickened, about 2-3 minutes. Let it cool completely.
- Whip the Cream:
- In a chilled bowl, beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Keep refrigerated.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a layer of whipped cream, followed by cherry filling.
- Place the second cake layer on top. Cover the entire cake with whipped cream.
- Decorate with chocolate shavings and fresh cherries.
- Chill and Serve:
