Ingredients:
1 lb Italian sausage links, sliced
4 medium potatoes, cut into bite-sized pieces
8 oz mushrooms, sliced
1 large onion, sliced
3 cloves garlic, minced
3 tablespoons olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat your oven to 400Β°F (200Β°C).
In a large bowl, combine the sliced sausage, potatoes, mushrooms, onion, and minced garlic.
Drizzle with olive oil and sprinkle with rosemary, thyme, paprika, salt, and pepper. Toss until everything is evenly coated.
Spread the mixture evenly on a baking sheet in a single layer.
Bake in the preheated oven for 50 minutes, or until the potatoes are tender and the sausage is fully cooked, stirring halfway through for even cooking.
Transfer to a serving dish, garnish with chopped parsley, and serve hot.
