Ingredients:
4 medium-sized potatoes, washed and thinly sliced
1 onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper, to taste
Optional: fresh herbs like thyme or rosemary
Instructions:
- Preheat your crockpot to low or high depending on the cooking time you prefer (low: 6-8 hours, high: 3-4 hours).
- In a bowl, combine the sliced potatoes, onion, garlic, olive oil, salt, and pepper. Toss everything together until well-coated.
- Lay out 4 pieces of aluminum foil, placing a portion of the potato mixture in the center of each.
- Fold the foil tightly around the potatoes, sealing them completely to trap in moisture.
- Place the foil-wrapped potato packets in the crockpot, stacking them as needed.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
- Carefully remove the foil packets and serve hot. Enjoy!
