Ingredients:

4 medium-sized potatoes, washed and thinly sliced

1 onion, thinly sliced

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper, to taste

Optional: fresh herbs like thyme or rosemary

Instructions:

  1. Preheat your crockpot to low or high depending on the cooking time you prefer (low: 6-8 hours, high: 3-4 hours).
  2. In a bowl, combine the sliced potatoes, onion, garlic, olive oil, salt, and pepper. Toss everything together until well-coated.
  3. Lay out 4 pieces of aluminum foil, placing a portion of the potato mixture in the center of each.
  4. Fold the foil tightly around the potatoes, sealing them completely to trap in moisture.
  5. Place the foil-wrapped potato packets in the crockpot, stacking them as needed.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
