Ingredients:
2 cups (250g) all-purpose flour
1/2 cup (100g) sugar
1/2 cup (125g) unsalted butter, cold and cubed
1 large egg
Zest of 1 lemon (or orange, if you prefer)
1/2 tsp vanilla extract
A pinch of salt
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, mix together the flour, sugar, and salt.
- Incorporate Butter: Add the cold butter cubes to the flour mixture. Rub it in with your fingers until it resembles a crumbly texture.
- Add Egg, Zest, and Vanilla: In a small bowl, whisk together the egg, lemon (or orange) zest, and vanilla extract. Pour this into the flour mixture and gently mix until a dough forms.
- Shape the Cookies: Pinch off small pieces of dough (about 1 tablespoon each) and roll them into thin logs, around 3-4 inches long. Shape each log into an “S” shape and place it on the prepared baking sheet.
- Bake: Bake for about 12-15 minutes, or until the edges turn lightly golden.
- Cool and Enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
